Time For Pumpkins! I get so excited when autumn rolls around and pumpkins come into season. Some of my absolute favorite recipes are created with pumpkins and Roasted Pumpkin Seeds are right at the top of that list. Are you looking for a healthy snack that is quick and simple to whip up? Well you can’t go wrong with pumpkin seeds they are a nutritional powerhouse.

Pumpkin seeds contain all kinds of beneficial nutrients such as: magnesium, manganese, copper, zinc, iron, phosphorus and protein. They also contain plant compounds known as phytosterols and free-radical scavenging antioxidants. This can give your health an added boost. AND they also contain L-Tryptophan, which is an amino acid that helps the body create serotonin and melatonin, which help regulate your hormones responsible for helping you relax and regulating your sleep cycle, along with magnesium. The roasted pumpkin seeds are also highly portable and do not require refrigeration, therefore, make an excellent snack to keep on hand when you are on the go, and as a quick anytime snack at home, too. When I was pregnant and working I use to keep these little powerhouse seeds in my pocket and nibble on them throughout the day. This not only keeps hunger at bay by helps keep energy levels up. Okay, enough with the nutritional lesson, let us get on with the recipe.

Roasted Pumpkin Seeds (or Bake Them)

Ingredientsrecipe ingredients for roasted pumpkin seeds

Pumpkin Seeds
1/2 teaspoon Olive Oil per Cup of Seeds
Salt to Taste ( I am now in love with Himalayan Pink Salt)

Directions

1. Wash the pumpkin seeds (they will feel slimy)
2. In bowl, mix coat seeds with olive oil
3. Spread seeds on a flat baking pan
4. Sprinkle the seeds with salt (optional)
5. You can bake at 375 for 7-15 minutes or roast seeds for 7-10 minutes

The longer you bake/roast the seeds the darker they will get. We like ours a little on the darker side.

This is such a marvelous treat, but I warn you they will disappear fast!! ENJOY!!!

  6. You can make roasted seeds with any squash with a hard outer shell. My favorites are acorn and butternut squash seeds. The seeds' outer shells are softer.View Comment
